Vegetarian Rebellion Salad

Oven-Roasted Tomatoes
Wash and shake dry your tomatoes. Toss with salt, pepper, and a couple of teaspoons of olive oil (optional). Spray a roasting tin with olive oil (or other non-stick) spray. Roast in either a slow oven (250°F/120°) for about 90 minutes, or in a medium oven (350°F/160°) for 20 – 30 minutes.

Healthy Caesar Dressing (for 1 small head lettuce)

  • 3 T low-fat mayonaise
  • 3 T non or low-fat plain youghurt (greek style, if you can get it)
  • 3 tablespoons grated Parmesan cheese (optional)
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1 small garlic clove, crushed
  • 1/4 teaspoon Worcestershire sauce

Whip together.

Dress your salad at the last minute, top with tomatoes and anything else you fancy


I planned to top mine with some nicely roasted turkey thigh (I’ve never seen this fascinating and useful cut outside of the UK. Does it even exist anywhere else?). Unfortunately, topping plans came to a screetching halt when TB (the boy) informed me that he had, in fact, eaten it all. Fooey on him. It’s nice to be vegetarian for a change, anyway!
